Macaroni Creste di Gallo

Fresh Pasta

COOKING INSTRUCTIONS
  1. Bring a large pot of water to a boil.
  2. Salt the water, like seasoning a pot of soup.
  3. Cook the pasta for 3 to 4 minutes.
  4. Drain the pasta and serve.
Tips from Luisa:
  • Boiling the pasta is the last thing you do when serving pasta. Fresh pasta does not like to sit and wait.
  • Use a pot that is big enough for the pasta to move freely. This prevents excess starch buildup.
  • Keep some of the pasta water to add to your sauce.
  • Immediately mix the pasta with your sauce after boiling to avoid sticking.
  • Avoid adding oil to the sauce, as it makes the pasta slippery and sauce doesn't pick up easily.
  • Pasta goes into the sauce, and then toss to coat; do not pour the sauce on top of the pasta.
  • Use a nice skillet that you can bring to the table, as this keeps the pasta hot for longer.
